Crispy Battered Fish

This is a crispy batter recipe that is easy to make and fine with most white fleshed fish. Here we have used Snapper.

1 Cup Self Raising Flour
1 Cup Water
Pinch of Salt
Tablespoon Cornflour
Tablespoon Olive Oil
Vegetable Oil for Deep Frying
4 Fillets of Snapper

Heat oil in a deep frying pan to a med-high temperature, make sure deep enough for fish to be emmersed in.

Sift flour, salt and corn flour into a bowl and stir in water and oil. It should form a thick but running mixture.

Cut fish into medium fillet sizes, dip into the batter mixture and then deep fry in the oil for a few minutes, or until golden brown.

Serve with quarter of lemon. Enjoy
